I have tried to stay away from talking about food or giving dieting tips, because I am a failure at the dieting part.  Food is always on my mind so that part I have down pretty good, but don’t want to bore you with my total and crazy obsession with food.

I do want to share that I am going to a potluck tomorrow and wanted to make scalloped corn the way my mother taught me back 40 some years ago.   I have no recipe to go from, but my memory isn’t want it use to be.  Looking on the internet I found about 500 varieties.  I found some that had crust and some that have toppings, but here is my mother’s simple recipe.

 3 cans of Cream Corn

2 Eggs

1 cup crushed saltine crackers

1/2 cup of butter 

Seasoning – Salt and pepper

Mix all ingredients and bake for 30 to 40 minutes at 350 degrees.  

I remember this so very well.  So watch out potluck lovers this is the big hit for the season. If you want to doctor it up a bit – you can use Ritz crackers.  But it is a great side dish and it is the time of the year we do side dishes with our Turkey and other meats.

I am not sure what the calorie count is… but I am sure you can determine from the ingredients.

Just have a little and call it good.  It is a share type dish that even back in my childhood was a favorite of all the family.  No leftovers to worry about.  All the little kids would say – where did the “scalped corn go.”  So for many years I knew it only by Scalped Corn.  Until Someone looked at me crazy and laughed.  You mean Scalloped Corn.  Oh I said!   “Whatever!”   “it still takes good!!”

  1. I’ve never heard of scalloped corn, but I would absolutely eat the whole pan!
