Strawberry Shortcake

2 1/3 c. Bisquick mix
1/2 c. milk

3 Tbsp. Sugar
3 Tbsp. Margarine (melted)
4 c. sliced Strawberries

12 servings Cool Whip Lite or Fat Free

Directions

Preheat oven to 350 degrees. Mix ingredients together. On an ungreased cooking sheet, drop 12 spoonfuls on the cooking sheet.

Bake 10-12 minutes, or until golden brown.

Slice in half, layer with strawberries. Top with Cool Whip and strawberries.

Number of Servings: 12

12 servings are about 1700 calories…. So I took them all in last Sunday. Now the other nifty thing I learn is that you can take a Angel Food cake mix and any other cake mix and put them in a ziploc to make individual cakes as you wish.

Well Angel Food cake mix is 1600 calories and Carrot Cake mix is 1600 calories. So combined that is 3200 calories. I consumed these cakes in 3 days after eating my shortcake as well – an additional 1700 calories.

So last week’s weigh in was 6 lbs up… now since then I have lost 3 lbs and I know it is from pure craziness that I am down 3 from walking many many miles to make up for the Cakes.

So the biggest thing I have learned from this experience is MODERATION. Moderation is the key. Cathy realizes she cannot keep cake mixes, short cake or any other dessert in her house.

Here is the recipe for the individual cakes – it is a nifty idea, but remember MODERATION

INGREDIENTS:
1 box Angel Food Cake Mix
1 box Cake Mix – Any Flavor
2 Tbsp Water
DIRECTIONS:
In a ziploc bag, combine the two cake mixes together and mix well. For each individual cake serving, take out 3 Tablespoons of the cake mix combination and mix it with 2 Tablespoons of water in a small microwave-safe container. Microwave on high for 1 minute, and you have your own instant individual little cake! Keep remaining cake mixture stored in the ziploc bag and use whenever you feel like a treat! You can top each cake with a dollop of fat free whipped topping and/or some fresh fruit.
